Rain, rain, and even more…rain

Since the swedish (so called) summer showed its usual side, cold and rainy, this weekend’s climbing plans got cancelled. However, in spite of the less desireable weather I went on at least one short and sweet, or should I say muddy, bike ride. And once back I looked more or less like a dalmatine. I missed a bike during my stay on the other side of the Atlantic Ocean though. Oh, well…only have myself to blame for that. For some reason the rather grey weather got me in a mood for cleaning. Hmmm, quite unexpected, but there are worse ways to spend a rainy day. Once the cleaning was done I tried to make some home-made granola bars. After a second try the result was pretty good. And the bars, squares, or whatever shape they have, will be perfect for the next outting. That is if they last until then.

Yummy Energy Bars
Beat 2 whole eggs, 4 teaspoons vegetable oil, and 1 teaspoon ground cinnamon in a large bowl. Stir in 1 2/3 cups plain granole (small clusters), 1/3 cup raisins, 1/3 cup cranberries, 1/3 cup almonds, 3 tablespoons toasted wheat germ, 3 tablespoons raw sunflower seeds, and 4 teaspoons sesame seeds. Blend well. Put baking paper in a 13 x 9- inch baking pan. Turn mixture into pan. Pat to an even layer. Bake at 300 degrees F for 20- 25 minutes or until edges are golden brown. Cool for 5 minutes in pan before putting it on a wire rack to cool completely. Cut into pieces. And voila!
